Over the course of this cold icy winter, I have spent a couple of endearing mornings in the warm toasty kitchens of friends while they flipped up some pancakes. They were such wonderful mornings, insulated from the cold with good food and great conversation. But they made me wonder why I never think to just whip up some pancakes simply because it’s snowing, or a Tuesday, or just because they are yummy.
This morning as winter is finally releasing into spring and rain drops are trying to wash away the last of the old gray snow, I decided to warm up my kitchen with some pancakes. I borrowed a recipe from Martha (and added a pinch of cinnamon) while my daughter danced around the kitchen singing songs from Frozen. After just a little more effort beyond frying an egg we were soon sitting down to some fluffy goodness.
The result? Delightful! Granted, I was missing conversation with good friends but the pancakes were pretty tasty and of course my daughter gobbled hers up. I do think some pure Michigan maple syrup would have made them perfect but I managed to make do with some golden amber from our friends to the north. While I can’t tell you if it was the surprise of pancakes or the impending sugar rush, it was a fun happy morning for my daughter and me – and our bellies are ready to face a cold rainy Wednesday.
