getting ready for summer and a recipe for Oatmeal Cookies

This spring has flown by in a whirlwind of snow, sun, work, travel, and personal “non-mom” achievements. May came and went and I’m not quite sure what happened to it. Now I find myself staring at Summer with 5 days to go until the kid is off of school for 11.5 weeks. Now I have to deal with the fact that since I’ve sort of been an “absent-mom” for the past month, I have not signed her up for any camps, I missed the cut off date for reduced-price tennis and swim lessons, she has one pair of shorts that fit and she desperately needs a haircut

So, while I spend an extra $10.00 per lesson, I’m hoping that I can make it up by filling most of her summer with trips to the lake, the pool, the library {my blossoming reader!}, visits to Grandparents, and cookies.

Somehow, no matter what life throws at me I can usually fend it off with cookies. Whether it’s a thank you to a neighbor, satisfying my own sweet tooth, or keeping the kid occupied for a while, cookies always seem to be the ticket to smiles – and happy tummies.

Here is my secret recipe for Oatmeal Cookies – it’s not really secret but if you’ve never added cinnamon to your oatmeal cookies, do it! You won’t be sorry!

Cinnamon Oatmeal Cookies:

1 3/4 cups flour
1 tbsp cinnamon
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp kosher salt
1 cup brown sugar
1/2 cup granulated sugar
3/4 cup butter
2 cups rolled oats
2 large eggs
1 tsp vanilla
3/4 – 1 cup raisins or chocolate chips or walnuts or a combination (whatever you want really – just think about what you like in granola)

Preheat oven to 350 degrees.
Sift together the flour, cinnamon, baking soda, baking powder, salt and set aside.
In your stand mixer, cream together the butter and sugar. Add in the eggs and vanilla, combine well. Slowly pour in the flour mixture. Stir in the oats and mix-ins, make sure it’s well combined.
Scoop out 12 cookies per parchment lined sheet. Bake for about 10 to 12 minutes, until lightly browned.
Cool completely before eating (well, at least try).
